carrot muffinlets


I made these for my grandmother, who loves my muffins.
You know how wonderful it is to have someone request your food
Your own personal recipe food?
Oh man.
You do not have to ask me twice.

Anyway, these are delicious.
I like my muffins to be on the healthy side, but not tasting like it.
You want something sweet and delicious.

So these little babies are full of oats and vegetables and spices and sweetness.
I use Splenda because sugar makes me feel horrible, but if you're against artificial sweeteners, you do what you have to do.


ingredients
2 cups oat flour
1 cup normal oats
1-5 tablespoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt

2 eggs
1 cup splenda
1 tablespoon honey
4 tablespoons vanilla
1 tablespoon apple cider vinegar

1-2 cups shredded carrot

make
Mix dry ingredients in a big bowl
Whisk [or fork, if you're like me and sometimes lose kitchen utensils] wet ingredients
Pour liquids into the big bowl over the dry stuff
Mix very lightly
Add carrot shreds
Mix very lightly
Spoon into muffinlet pans
Bake at 350 for 15-20 minutes,
until the tops look a little toasty

those look AMAZING!!! And they are gluten free..awesome! I'm not allergic to gluten or anything but I know a lot of people that are, so these would be great! I am going to try to veganize these and see what happens :) Thanks for the recipe!

mm these look great. i must say thought that i'm a sugar girl and would have to substitute the splenda.

Ooooh, this recipe sounds so delicious! God I love baking for my grandma! Sadly she's not here with me right now (she comes around to stay with us in Canada for the summer every year; she just left :(), but while she was here, I used to always make her my signature almond cookies every week. She used to always say it's because of these cookies that she has um, regular bowel movements. Haha! Gotta love grandmas, and grandmas who love us. :)
