dinners
hello friends.
firstly, I want to say thank you for coming here.
the blog has been a bit annoying lately and if it's giving you trouble and strange messages, know that you aren't the only one.
the reason for this is that I got my very own URL and so while I will still be right here and you can still get to me by typing it whatever you were typing in, the heavens should magically redirect you to..... beccamole.com. (that's me)
yay! a big girl blog.
secondly, I want to share a little project with you. at the beginning of last week I decided it might be fun to take one picture of our meals every night.
since thomas is a regular eater and I am somewhat of an experimental vegan, our meals are usually different, or combined in interesting ways.
he does not mind eating vegan food, and I do not mind cooking two different meals.
it's fun, really. and you will see that some days we share a lot of the same stuff (asparagus, mainly).
there were a few night where I worked until seven and we ate silly messes of leftovers in bowls.
he ate flat chicken with mashed potatoes for three nights in a row so we didn't get that on camera.
I think in doing this, I've discovered why I don't share food or recipes with you as much as I intend to....it's because
1.) our teeny tiny kitchen has terrible lighting, and
2.) most of our eating is after the sun goes down, which subjects us to even worse lighting.
so I end up being angry at the pictures instead of happy they were taken.
anyway, here I just took them, and didn't worry.
also, I think this might become more of a habit.
I guess I feel better spending some sweat and tears on our dinner if it is preserved in some way, silly as that may be.
lessons learned:
1.) we eat almost everything out of bowls.
2.) farro is not as scary as I thought.
I just put two handful in a pot, covered it with water, and boiled it until it was finished- twentyish minutes.
3.) next time, don't exclude thomas so much at dinnertime.
ha.
4.) I like having this record of our dinners
5.) this red pesto is ridiculously good.
I ate it with beans, broccoli and avocado on wednesday (the unpictured day) and am thankful I thought to make enough to have for a while.
here's to another week of eating!

I enjoy your blog so I was happy to be able to access it tonight since I was one of those who "lost" you for a few days.
Yay I love this! I frequently document our meals on Instagram, i'm kind of obsessed with taking photos of food. Those roasted veggies look divine! love all your healthy choices. Gllad you're back! :)
this is amazing. i am so intrigued by all of these dishes... SO different from what i eat. i am inspired.
Read a bit of your blog...adorable. And mochi is awesome. I first encountered it at frozen yogurt!
I like to document my food too, I do try to put more effort in when I do so, hehe!
