HAPPY BOWL/ CHARRED ZUCCHINI
lately I have been wanting to want to eat a lot of salads, but...it's too cold. it's way too chilly out to feel happy while chewing on romaine lettuce.
veggies always have a place in my heart and my belly but seasonality is everything. last night I threw together this bowl from all the things I just collected from the store and it blew my mind. most importantly here you will need zucchini and lime. the pico de gallo is really a big deal too. everything else is pretty negotiable but not the lime or zucchini.
so you cut the zucchini (I used two but I could eat fifteen) into thin slices, add to a pan over medium high heat with a little water in it and cook for about two minutes there. then add a glug of olive oil and turn up the heat. walk into a different room and let the zucchini stick to the pan a little. those charred bits really add flavor and make the whole thing.
I don't typically overcook or char my vegetables as I know this cooks out a lot of the nutients, but this is a special occasion and I think that's just fine. anyway, once the zucchini are plenty browned and blackened, add them to a big bowl and squeeze some lime juice on top. then add some pico de gallo (confession: not homemade. and it's january. don't even care) and hummus and carrot slices and a few stray lentils if you have them.
I ate this for two meals in a row because it wouldn't leave my head, and I don't plan on stopping anytime soon.
